Description¶
At maturity, Allium schoenoprasum, commonly known as Chives, is a hardy, perennial herb that is widely grown for its edible leaves and delicate, purple flowers. Chives typically grow to a height of 0.3–0.4 m (12–16 inches) and form clumps of slender, hollow, grass-like leaves that have a mild onion flavor. The leaves are bright green and often used fresh as a garnish or in cooking for their subtle, onion-like taste. In mid to late spring, Allium schoenoprasum produces clusters of small, star-shaped, purple or pink flowers, which attract pollinators such as bees and butterflies. These flowers are also edible and add a colorful touch to salads or garnishes. Chives thrive in well-drained, moderately fertile soil and prefer full sun to partial shade. They are highly adaptable, growing in a variety of conditions, and are especially useful in culinary contexts.
